Biere De Saison Raspberry
This iteration of our house biere de saison had a low and fruity acidity, less citric than usual, less sharp. So we leant into it by refermenting the base beer with 200g per litre of Kentish raspberries (frozen, fresh ones are so hard to handle) for 2 months. The aroma and flavour of the raspberries merge and meld with our house saison in a lovely synchrony. The fruit grows, surrounded by grass, hay, bready malts. The acidity is appropriate: there, but not excessive. The raspberry retains its aura, though its sweetness is stripped away / 5.5% / 330ml
